I don’t think there is much better than fresh summer produce. I get a box, The Produce Box, delivered to my doorstep every Wednesday morning and I still make frequent trips to the local farmer’s market. I just can’t get enough of this fresh, local, delicious produce.
When I have an abundance of fruits and vegetables, I start to get creative. This salsa has cucumbers, peaches, and jalapeños in it. I have never tried the combination before this and I have already made it twice in one week. Which is basically unheard of over here, there are always new recipes to make. It is that good.
So far, I have put it on brisket tacos, eaten with tortilla chips, and topped over pork tenderloin. All delicious. I think my favorite was piled high in a soft tortilla with brisket. It was great.

A mix of summer’s abundant produce to make a different variation of salsa. It is tangy, sweet, a little spicy, and highly addicting.
1 cup of fresh Peaches, diced, ~ 2 peaches
1/2 cup of Cucumber, peeled, seeded, and diced, ~ 1 medium
1 Jalapeño, seeded and diced
1 clove of Garlic, minced
2 tablespoons of Lime Juice, freshly squeezed, ~ 1 large
3 tablespoons of Cilantro, chopped finely
1/2 teaspoon of Kosher Salt
Mix all of the ingredients together in a small bowl.
Refrigerate until ready for use.
