I hope you aren’t tired of grilling recipes floating around on the blog-o-sphere, because they are here to stay on The Barbee Housewife! Well, until summer is over.
Ethan loves hamburgers and while I too, love a good burger, 9 times out of 10, I am choosing a grilled chicken sandwich if that is on the menu. I can’t get enough of them! This one is a great replica of a restaurant chicken sandwich, at home.
This chicken sandwich is really simple to make and is not overly-cajun, aka spicy. The cajun seasoning just gives it great flavor without burning your tastebuds off!
This makes enough for 4 sandwiches.
Cajun Grilled Chicken Sandwich
This chicken is slathered in butter and spiced with a homemade cajun seasoning, and then grilled and topped with your favorite ingredients to make a perfect sandwich.
Ingredients: 1 lb. of Chicken Breast, boneless and skinless, 2 halves or 1 whole chicken breast 1/4 cup of Butter, melted 3/4 tablespoon of Paprika 3/4 teaspoon of Garlic Powder 1/2 teaspoon of Cayenne Pepper 1/2 teaspoon of Salt 1/4 teaspoon of Pepper 1/4 teaspoon of White Pepper 1/4 teaspoon of Cumin 1/4 teaspoon of Thyme 1/8 teaspoon of Oregano Toppings: Mayonnaise, Pepper Jack Cheese slices, Lettuce, Tomato, Hamburger Buns
First, using your tool of choice, pound the chicken to 1/2 inch thickness. ( I use a small skillet, I probably need to invest in a meat tenderizer.) Cut the chicken into 4 pieces.
Now, brush the chicken with the melted butter on both sides. Alternating sides, until all of the butter is gone.
Next, combine all of the spices in a small bowl. Sprinkle the cajun mixture all over the chicken, using it all.
Heat the grill to medium-high heat. When ready, grill the chicken 4-6 minutes per side, until done. Top the chicken with a slice of cheese for the last minute and place your buns on the grill until toasty.
Remove chicken and buns from the grill with the chicken on one plate and the buns on another.
Now build your sandwich, spread a layer of mayonnaise of the top and bottom cut sides of the bun. Place the chicken on the bottom layer and top with a piece of lettuce and sliced tomato.
