This salad couldn’t be any easier. You whip up a vinaigrette, slice an avocado, blood orange, and then tear some arugula, however, this simple salad tastes outstanding, really. It is a party for your taste-buds, the smooth avocado, spicy arugula, tart orange, and sweetness from the vinaigrette, it is perfect in every single way.
I served this as a side salad and I could not get enough. I started having it for lunch, snacks, every meal you could think of until my last avocado had been sliced.
3 tablespoons of Olive Oil
2 teaspoons of Champagne or White Wine Vinegar
3 teaspoons of Honey
2 teaspoons of Lime Juice, freshly squeezed
1 teaspoon of Poppy Seeds
Salt and Black Pepper
2 Oranges, Cara Cara or Blood Orange, preferably, peeled, and sliced into 1/2 inch pieces
1 Avocado, halved, pitted, and sliced
Handful of Arugula, washed and dried
First, whisk the first 5 ingredients together. Salt and pepper to taste. Set aside.
Now, on a large serving platter or individual serving plates, arrange the fruit and avocado. Top with torn arugula. Drizzle with the desired amount of vinaigrette.
