I seem to always share a super-easy chicken dish right around the holidays, remember this one? I guess it is because in all of the midst of wrapping presents, baking cookies, making toffee, and decorating the Christmas tree, we still have to eat dinner.
This dish was easy to prepare and so delicious. You can serve the chicken breast over cheesy spanish rice or you can cut it into strips and serve it with tortillas on the side. However you decide to serve it, don’t forget everyones favorite condiment, guacamole.
Ingredients: 4 Chicken Breast Halves, boneless, skinless 1/2 cup of Taco Seasoning 4 tablespoons of Butter 1 Green Bell Pepper, cut into strips 1 Red Bell Pepper, cut into strips 1 White Onion, cut into strips 2 tablespoons of Olive Oil 1 cup of Sharp Cheddar Cheese, shredded
First, preheat your oven to 375 degrees.
Now, liberally coat the chicken, on both sides, with taco seasoning. Set aside.
Melt the butter in a skillet, over medium heat. When the pan is hot, place the chicken in and sear each side of the chicken for 1-2 minutes, you want it to have a dark golden crust.
Remove the chicken to a oven-safe pan. Place the cut veggies on top and drizzle with the olive oil; sprinkle with cheese and bake for 30 minutes.
