Summer is officially here. The grills are on every night, the pool is packed, ice cream bars are dripping, the neighborhood streets are packed with after-dinner walks and bike rides, and gardens are plentiful! It is one of my favorite times of year. I love going to the farmer’s market and finding out what the local farmer’s have been up to. The one thing that I cannot get enough of during the summer is fresh tomatoes. The ones during the winter do not hold a candle to fresh homegrown tomatoes. I love to eat tomato sandwiches,eat them sliced fresh, pretty much anyway, all the time!
I baked these tomatoes with a little bit of cheese and some basil from my garden. They were delicious and simple. These were such an easy side dish and one I will be making all summer long! If making these for a crowd, I would say 2-3 slices per person for a side. You can easily adjust the recipe to double or triple it!
Ingredients: 2 tomatoes, sliced thickly Kosher salt and Freshly Ground Black Pepper 1 tablespoon of Olive Oil 1/4 cup of Parmesan, grated 1/4 cup of Mozzarella, grated 2-3 Basil Leaves, torn or sliced into pieces
First, preheat the oven to 450 degrees.
Now, layer the tomatoes in an oven-safe dish, you don’t want them to overlap. Sprinkle with salt and pepper, liberally.
Drizzle the olive oil on top, then sprinkle with cheeses, and basil. Bake for 13-15 minutes, until the cheese is melted.
