Chicken seems to always be a crowd pleaser, especially grilled chicken. It is a healthy option and almost everyone likes it. This chicken had a quick marinade, with pantry staples. I always keep lemons and limes on hand and this was a perfect addition. The honey gets caramelized on the grill and creates great char marks. This chicken would be great in a wrap, on a salad, or as the main entree.
I love having quick recipes like these to make during those busy days in the summer when I am just not sure what is for dinner!
Ingredients: 1/4 cup of Honey 3 tablespoons of Soy Sauce 1 tablespoon of Olive Oil Zest & Juice from 2 Limes 3 cloves of Garlic, minced 2 tablespoons of Sriracha 1 teaspoon of Salt 4 Chicken Breast, boneless & skinless
First, place the chicken in a ziplock bag. Now, in a small bowl, whisk together all of the ingredients; pour the marinade over the chicken. Place in the refrigerator for at least 4 hours, but no longer than overnight.
When ready to grill, pre-heat grill or grill pan to medium-high heat. Remove the chicken from the marinade and discard remaining marinade. When the grill is hot, place the chicken on the grill; grill for about 6-10 minutes on each side (depending on the thickness) until the chicken is completely done. The internal temperature should be 165 and the juices should run clear.
