Summer is here and our Farmer’s Market here in Raleigh is open and in full-swing. I am enjoying picking up all of my produce fresh and local and of course, supporting my community. During the summer, we do lots of grilling, it is quick and easy. I usually prepare the marinades after breakfast and my morning walk with the dogs. After that, I am free to do whatever I want with the day and not worry about dinner until we are ready to eat.
I love making fresh salads, like this one, to go with dinner. They can sit in the refrigerator all day and then I just pull it out and serve. I think that these cucumbers actually get better, aka spicier, the longer they sit. I can’t seem to get enough of the cilantro-lime flavoring, it goes great on rice and now these cucumbers, I can’t wait to try it on other things!
You can serve this salad as a side, stuffed in pitas, tacos, wraps, or even on your sandwich for lunch.
Ingredients: 2 Cucumbers, thinly sliced 4 tablespoons of Cilantro, minced 1 Jalapeño, minced 2 cloves of Garlic, minced 3 tablespoons of Lime Juice, fresh 3 tablespoons of Olive Oil 1/4 teaspoon of Crushed Red Pepper 1/2 teaspoon of Salt 1/2 teaspoon of Pepper
Directions: Mix all of the ingredients together in a bowl, serve immediately or refrigerate until ready for use.
