I am going to an important lunch this afternoon, I stress about all the small details, about everything. I have been worrying myself sick about to what to wear. After lots of trying on, a few new purchases (!), I know what I need to do. I need to pull out the standby, my little black dress, and a strand of pearls. You can’t go wrong with that, classic.
There are all of these crazy recipes floating around the blogosphere now. It’s like, who can cram the most recipes into one? Some of them I can get on bored with, but some just sound like my mouth wouldn’t know what to do with that many flavors. Sometimes you just need to get back to the basics, these salty chocolate chunk cookies are just that. They are just really, really good chocolate chip cookies. The sprinkle of sea salt adds a bit of saltiness and makes them delicious.
Ingredients: 1 1/2 cups of Flour 1 teaspoon of Baking Powder 1/2 teaspoon of Kosher Salt 1/4 teaspoon of Baking Soda 1/2 cup of Butter, unsalted, room temperature 3/4 cup of Light Brown Sugar, packed 1/2 cup of Sugar 1/4 cup of Powdered Sugar 2 Large Egg Yolks 1 Large Egg 1 teaspoon of Vanilla Extract 8 oz. of Semisweet Chocolate Flaky Sea Salt
First, preheat your oven to 375 degrees. Line a baking sheet with a silpat mat or parchment paper.
Now, in a medium bowl, whisk the flour, baking powder, salt, and baking soda. Set aside.
In the bowl of your mixer, beat the butter, sugar, and light brown sugar until light and fluffily, 3-4 minutes. Add egg yolks, egg, and vanilla; beat for 4-5 minutes. Reduce the speed to low and add in the dry ingredients slowly, mix until combined. Stir in the chocolate.
Spoon rounded tablespoons onto the baking sheet, about 1 inch apart. Sprinkle with sea salt. Bake for 10-12 minutes.
Let cool slightly on the pan and transfer to a wire rack to cool completely.
