One time Ethan and I were going to a big family reunion, there were going to be tons of people there, so everyone brought a favorite dish. Ethan signed me up for macaroni and cheese and loaded baked potato casserole. Hello cheesy carbs! It was going to be my first time meeting some of these people and I desperately just wanted to bring marinated asparagus or SOMETHING else. I made my two dishes and it was fine, however, the star of the show was sesame seed fried chicken. The host had gotten it from the local country club and I was obsessed. It was just so amazing. These chicken bites reminded me so much of that chicken, but this is baked, not fried, and little bites. It’s funny how food can remind you of a specific time.
This chicken would be great for lunch, dinner, or even as an appetizer (cut in smaller bites.) The ingredients will sound strange, but don’t worry, it works. My mayonnaise-hating-husband had no idea there was even any in there! I really hope he never starts reading this… 🙂
Ingredients: 1/2 cup of Mayonnaise 1 cup of Plain Breadcrumbs 1/2 cup of Sesame Seeds 2 tablespoons of Dry Mustard 2 tablespoons of Onion Powder 3-4 Chicken Breast, about 1-1.5 lbs. of Chicken, cut into 1-2 inch pieces
First, preheat your oven to 475 degrees. Cover a baking sheet with aluminum foil and place a cooling rack on top, spray with nonstick cooking spray.
Now, put the mayonnaise in a shallow bowl .Coat the chicken in the mayonnaise. In another shallow bowl, combine the breadcrumbs, sesame seeds, mustard, and onion powder. Place the chicken in that bowl to coat. Place coated chicken onto wire rack.
Bake for 15-20 minutes.
