Are you a morning person? I am a kind-of-morning person. I hate getting out of bed like dread every second and minute of it, but when I am awake (aka, when I have had coffee, but only 3/4 a cup) I am so much better. Whats up with the 3/4 of a cup thing? If I have anymore I will literally be a jittery mess and talking EVERY single persons head off. However, I digress, I have really started enjoying the mornings. Especially now with the temperatures rising, it is nice to get a walk in before it heats up too much. If you would have asked me 4 years ago if I liked mornings, you would have had a completely different answer. It is something almost everyone that knew me, knew about me.
SOTHEPOINTOFTHISPOST! If you have someone in your life, even the biggest morning haters, that hates the morning, these donuts will brighten their day. I have made chocolate donuts before, but these are fluffy, like really fluffy! I promise you when I say they were made, baked, and glazed in 20 minutes. So easy, so fast, and bring so much pleasure, not only to those eating, but making them, too. I was pretty impressed with how easy and pretty they turned out to be! Now who wants to get in the car and drive to the donut shop after seeing how fast you can make these? I hope no one!
This will yield 6 donuts. They will keep good for at least 3 days in an airtight container. Heat them in the microwave for 20 seconds if not eating right away.
Ingredients: For the Donuts: 1 cup of Flour 1 teaspoon of Baking Powder 1/4 teaspoon of Baking Soda 1 Large Egg 1/2 cup of Light Brown Sugar, packed 1/4 cup of Milk 1/4 cup of Plain Yogurt 2 tablespoons of Butter, unsalted & melted 1 1/2 teaspoon of Vanilla Extract For the Glaze: 1/2 cup of Semisweet Chocolate Chips 2 tablespoons of Unsalted butter 2 teaspoons Light Corn Syrup 2 teaspoons of Water Sprinkles, for garnish
First, preheat your oven to 350 degrees and spray a donut pan with non-stick cooking spray.
Next, in a large size bowl, whisk the flour, baking powder, and baking soda. Set aside. In a medium bowl, whisk together the egg, brown sugar, milk, plain yogurt, butter, and vanilla. Now pour the wet ingredients into the dry ingredients and mix together until just combined, do not over mix.
Now, pour the donut mix into a plastic bag and cut off one of the corners, pipe the donuts into the mold. Bake for 8-10 minutes.
While your donuts are baking, make the glaze. Place the chocolate chips, butter, syrup, and water in a microwave-safe bowl. Microwave the glaze in 20 second intervals, stirring in between, until melted.
When the donuts have come out, flip the pan upside down and let the donuts cool for a few minutes on a wire rack or cooling towel. When they are cool enough to handle, dip into the glaze and then press down into the sprinkles.
