This is one of those recipes that you do a double-take on. Does she really need to put a recipe for that on her blog? The answer is obviously, yes. This was seriously easy, I mean do-it-in-your-sleep easy and seriously delicious. These packages of sausage have quite a long shelf life. They are so delicious to heat up on the grill and eat with yellow mustard as a quick appetizer or I can use them in this spicy sausage pasta. They are always great to have, this is just one more recipe that I can add to my arsenal of sausage recipes. You place everything on a pan and just let the oven do the work for you. I served this with a big spinach salad to balance the whole meal out. The leftovers are fabulous in a flour tortilla for breakfast.
Ingredients: 1 package of Smoked Sausage, beef, cut into 1/2 inch pieces 1/2 of a Yellow Onion, diced 3 Large Russet Potatoes, peeled and diced 2 1/2 tablespoons of Olive Oil, divided 1 teaspoon of Sea Salt 1/2 teaspoon of Black Pepper 1/4 teaspoon of Sweet Paprika 1/4 teaspoon of Dried Thyme 1/2 cup of Sharp Cheddar Cheese, shredded
First, preheat your oven to 400 degrees. Line a baking sheet with aluminum foil. Drizzle 1/2 tablespoon of olive oil on in.
Now, place the sausage, onions, potatoes, olive oil, salt, pepper, paprika, and thyme in a large bowl. Toss well to combine.
Spread evenly on the baking sheet and bake for 45 minutes, stirring every 15 minutes. Sprinkle the cheese on top and bake for 5-10 minutes, until completely melted.
