I love having smoothies for breakfast. It is a great way to get all of the nutrients you need to start the day in one glass. However, I still have a feeling that I didn’t eat breakfast. I love sitting down at the table with my husband as we discuss the day and eat our breakfast together. When I am drinking my smoothie while running around doing a million other things, I don’t get the feeling of breakfast.
Insert smoothie bowl. This is everything I love about a smoothie, just in a bowl, with amazing toppings. I added a little bit of my favorite cereal, shredded coconut, and a delicious peanut butter sauce I microwaved. Go easy on the toppings, the smoothie is already filling enough. I had all of these great ideas of layering the entire bowl with toppings, fresh strawberries, bananas, nuts and then I realized that was a bad idea.
This delicious bowl will fill you up and you will enjoy eating it, with a spoon instead of a straw!
1/2 of a Banana
1/2 cup of Frozen Mixed Berries
2 tablespoons of Oats
1 tablespoon of Flax Seeds
3/4 cup of Milk
1/4 + 2 tablespoons of Plain Greek Yogurt, non-fat
Additional Toppings: Granola, cereal, nuts, shredded coconut, fresh fruit, peanut butter sauce*, etc
Place all of the ingredients in a blender and blend until smooth. Serve in a bowl and garnish with desired toppings.
*Peanut Butter Sauce: Microwave 1 tablespoon of peanut butter, 1 tablespoon of milk, and 1 teaspoon of maple syrup for 30 seconds!
