I think breakfast tacos are the best breakfast food in the entire world. They don’t have to be just for breakfast either, you could eat them around 2 AM, if you were hungry, hypotetically. A close second, maybe even tied for first, is a runny egg, on top of anything. I went absolutely ga-ga after I first tried, egg-in-the-hole. When I discovered huevo-in-the-hole, it was like my two favorite breakfast foods colliding.
Huevo-in-the-hole has everything I love in breakfast. It is quick and easy to make, filling, decently healthy, and I can douse it with salsa. You can always add sour cream, cilantro, or avocado to your plate as well.
Ingredients: 2 Corn Tortillas 2 tablespoons of Butter 1 Large Egg Salt & Pepper, to taste Salsa Additional toppings: Sour Cream, Cilantro, Avocado
First, using a biscuit cutter or the top of a glass, cut a circle out of the corn tortillas.
Now, melt 1/2 tablespoon of butter in a skillet over medium heat. Place both tortillas, stacked, in the skillet over the butter. Place 1/2 tablespoon of butter in the middle of the hole, when it melts, crack the egg in to the hole. Sprinkle with salt and pepper. Let it cook for 1/2-2 minutes. Scoot the tortilla over and melt the remaining 1 tablespoon of butter, flip the tortilla on top of it and cook until desired doneness is achieved.
Heat the middle circles in the skillet for a few minutes on each side to use for dipping, if desired.
Serve immediately. Garnish with toppings, if desired.
