After having this on my pinterest board for months, I finally tried to make this and man was it a success! I was a little intimidated by this flavor combination at first, even though I love both honey and Cajun, but they compliment each other perfectly.

3 tablespoons butter
2 tablespoons honey
.5 tablespoon black pepper
.5 tablespoon Cajun seasoning
Preheat over to 375 degrees.
In a small saucepan combine honey and butter and let simmer on low heat.
Put a cast iron skillet, sprayed with Pam, on medium heat.
Rub the black pepper and Cajun seasoning to completely cover the pork tenderloin. place the pork tenderloin in the cast iron skillet. Sear for 4 minutes on the top and bottom and 1.5 minutes on each side. The amount of time is not as important as a really good sear, you just want to make sure it does not burn! These times will differ because every tenderloin will not always be the same size!
Place the iron skillet in the oven and let bake for 15 minutes. Take out the cast iron skillet and pour half of the honey butter sauce on top, flip the tenderloin and pour the rest. Cook for 5 more minutes.
Remove and slice diagonally. If your pork is not done completely, slice and let simmer in the juices for 5 more minutes until cooked completely.
I served this tenderloin with brown rice and drizzled some of the honey butter reduction on top. Delicious!
